Chili

Difficulty: Easy

Serves: 6 servings (it’s really not worth making any less)

Preparation time: 15 Minutes

Cook time: 30 Minutes

Total time: 45 Minutes 

Serve with: Chili trappings…

Notes: Low Sodium, Heart Healthy

 Ingredients:

  • 4 cups MothaSauce

  • 1 tbsp vegetable oil

  • 1 small yellow onion

  • 2 cloves garlic

  • 1 cup / can beans of choice (I use rehydrated black beans and kidney beans)

  • 1 small Poblano Pepper

  • 1 small green bell pepper

  • Optional other peppers: red pepper, Jalapeño, Habanero, etc.

  • 1 tsp whole cumin or ½ tsp ground cumin

  • 1 tsp dried oregano

  • 2 tsp paprika

  • 1/8 tsp red chili flakes

  • ½ cup chicken stock (low sodium)

  • 1/8 tsp Potassium Chloride

  • ¼ tsp MSG

  • Salt and Pepper to taste

 

Instructions:

Mince garlic, dice onion and peppers, rinse beans.

Sauté onion in garlic with oil over medium heat in large sauce pan, ca. 3 minutes. Add peppers, spices and herbs, let cook for a couple of minutes.

Add MothaSauce & stock, MSG & Potassium Chloride, let simmer about 10 minutes. Add beans, and let simmer another 5 to 10 minutes.
